Quick Purple Sweet Potato Salad
Want to know what to do with those purple sweet potatoes - try this crunchy sweet salad that is delicious and flavorful.
Ingredients
4-5 purple potatoes
1 green apple
1/2 c. large plump golden raisins
1/4 c. chopped green onions
1/4 c. shredded carrots
1/3 c. pumkin seeds
1/3 c. celery
2-3 tbs mayonaisse (canola, olive oil or your favorite vegan kind)
salt
pepper
fresh minced or powdered garlic
- Steam or boil the potatoes (20m steam method is my favorite) till soft.
- Set potatoes aside and let cool for 30m.
- Chop the green onions, celery.
- Quarter the green apple and thin slice.
- Once the potatoes are room temperature, cut them into 2-3” bite sized chunks.
- Mix mayonaisse, apples, carrots, celery, pumpkin seeds, raisins, potatoes and green onion.
- Add salt, pepper and garlic. Mix some more.
- Put salad into refridgerator, covered for 2-3 hours or overnight for richest flavorful
