Quick Purple Sweet Potato Salad

Want to know what to do with those purple sweet potatoes - try this crunchy sweet salad that is delicious and flavorful.

Ingredients

4-5 purple potatoes
1 green apple
1/2 c. large plump golden raisins
1/4 c. chopped green onions
1/4 c. shredded carrots
1/3 c. pumkin seeds
1/3 c. celery
2-3 tbs mayonaisse (canola, olive oil or your favorite vegan kind)
salt
pepper
fresh minced or powdered garlic
  1. Steam or boil the potatoes (20m steam method is my favorite) till soft.
  2. Set potatoes aside and let cool for 30m.
  3. Chop the green onions, celery.
  4. Quarter the green apple and thin slice.
  5. Once the potatoes are room temperature, cut them into 2-3” bite sized chunks.
  6. Mix mayonaisse, apples, carrots, celery, pumpkin seeds, raisins, potatoes and green onion.
  7. Add salt, pepper and garlic. Mix some more.
  8. Put salad into refridgerator, covered for 2-3 hours or overnight for richest flavorful
