## Quick Purple Sweet Potato Salad |
|
|
|

### Ingredients |
|
|
|
|
|
|
|
4-5 purple potatoes |
|
|
|
1 green apple |
|
|
|
1/2 c. large plump golden raisins |
|
|
|
1/4 c. chopped green onions |
|
|
|
1/4 c. shredded carrots |
|
|
|
1/3 c. pumkin seeds |
|
|
|
1/3 c. celery |
|
|
|
2-3 tbs mayonaisse (canola, olive oil or your favorite vegan kind) |
|
|
|
salt |
|
|
|
pepper |
|
|
|
fresh minced or powdered garlic |
|
|
|
|
|
|
|
1. Steam or boil the potatoes (20m steam method is my favorite) till soft. |
|
|
|
2. Set potatoes aside and let cool for 30m. |
|
|
|
3. Chop the green onions, celery. |
|
|
|
4. Quarter the green apple and thin slice. |
|
|
|
5. Once the potatoes are room temperature, cut them into 2-3" bite sized chunks. |
|
|
|
6. Mix mayonaisse, apples, carrots, celery, pumpkin seeds, raisins, potatoes and green onion. |
|
|
|
7. Add salt, pepper and garlic. Mix some more. |
|
|
|
8. Put salad into refridgerator, covered for 2-3 hours or overnight for richest flavorful |
|
